You might be a little intimidated walking into Slim’s Last Chance Chili Shack in Georgetown if you judge the place from the outside. It looks more like a dive bar that’s seen better days than a restaurant that serves some of the best chili in Seattle. Once you get over the “Is this really the place?” question — you enter a chili haven that you’ll want to go back to over and over again.

Slim’s Last Chance Chili Shack is best known for its award-winning chili (obviously — that’s why “chili” is in the name). It’s been named one of Travel & Leisure Magazine‘s “Best Comfort Foods,” Bon Apetit‘s “Best Chili Spots,” and it’s also been featured on Diners, Drive-Ins and Dives. There’s a really good reason for all the hype!

There are four different types of chili at Slim’s Last Chance Chili Shack: Texas Red (traditional all meat chili made with choice beef), Brisket n’ Bean (pig iron slow smoked brisket, ground choice beef, fire roasted tomatoes and red beans), Chili Verde (New Mexico green chilies, tomatillos, and slow simmered pork), and Turkey & White Bean (ground turkey, white beans, and serrano peppers simmered in a hearty broth).

All chili is served on its own or poured over jalapeno mac n’ cheese or white cheddar grits. You can also choose from a long list of toppings, including sour cream and chives, cheddar and pepper jack cheese, a whole grilled jalapeno pepper, diced sweet onions and more. The first time I went to Slim’s Last Chance Chili Shack, I ordered the Texas Red over mac n’ cheese with the works, and it just about blew my mind. I’ve tried all sorts of combinations since, and I’ve NEVER been disappointed.

NOTE: I can’t explain how much I’m restraining myself from shutting down my computer and running to Slim’s Last Chance right now. My mouth is literally watering as I write this post.

On top of incredible chili, Slim’s Last Chance Chili Shack is also a “watering hole.” They serve ice-cold beer and they also have a full bar. I almost feel guilty when I don’t order a beer there. Slim’s Last Chance feels more like a bar than a restaurant.

We were there once when the Dolly Rottens (two of the band members are bartenders/waitresses at Slim’s) performed an impromptu concert. We honestly didn’t know anyone was going on stage, but it added a little extra excitement to our night. Slim’s Last Chance is obviously not the most popular music venue in Seattle, but it’s definitely good for some free entertainment.

Slim’s Last Chance Chili Shack is easily one of my favorite spots right now. From the “rough around the edges” atmosphere (it’s called a shack for a reason) to the incredible chili — Slim’s offers a true Seattle experience. If you haven’t been there yet, I suggest picking up your keys, turning on your car and driving to Georgetown right now.
